- 2 tablespoons cocao powder
- 1 cup dates (pitted)
- 2 tablespoons unsweetened shredded coconut
- tiny pinch of sea salt
- a little bit of cocoa powder to roll in
- Put cocoa powder, dates, coconut shreds, and the pinch of salt in a food processor. Blend until almost smooth, adding water by teaspoonfuls if too dry and crumbly and coconut by teaspoonfuls if too wet and sticky.
- Scoop date purée by the tablespoonful and roll into small balls. Cover and chill.
- Roll truffles in cocoa powder.
