Image of Cocoa-Date Truffles

  • 2 tablespoons cocao powder
  • 1 cup dates (pitted)
  • 2 tablespoons unsweetened shredded coconut
  • tiny pinch of sea salt
  • a little bit of cocoa powder to roll in
  1. Put cocoa powder, dates, coconut shreds, and the pinch of salt in a food processor. Blend until almost smooth, adding water by teaspoonfuls if too dry and crumbly and coconut by teaspoonfuls if too wet and sticky.
  2. Scoop date purée by the tablespoonful and roll into small balls. Cover and chill.
  3. Roll truffles in cocoa powder.
